Lamb and Couscous Meatballs

Ingredients

  • 1/2 cup instant couscous
  • 1 cup hot stock
  • 500g lamb mince
  • 1 tablespoon honey
  • grated zest of one lemon
  • salt and pepper
  • 1/2 block feta (crumbled)
  • 1 free range egg
  • 1 sprig rosemary (finely chopped)

Directions

Step 1
Pour stock over couscous then cover with a clean tea towel and leave to absorb.
Step 2
Crack egg into a large mixing bowl then whisk with honey, lemon rind and rosemary and season.
Step 3
Check couscous and if ready, break up with a fork then add to mixing bowl with the mince and combine well.
Step 4
Stir through feta.
Step 5
Using a quarter cup measure, scoop and press tightly into patties.
Step 6
Shallow fry 4 - 5 minutes on each side.
Step 7
Serve with humus or Tzatziki, finely sliced Spanish onion, fresh sliced tomatoes and leafy greens on flat bread.
Or make a burger out of them.
Or serve alongside hand cut potato wedges.
Step 8
This recipe makes about 8 - 10 depending on how you roll!
