Macaroni and Cheese

  • 300g macaroni (or other tiny pasta shape)
  • 50g butter
  • 50g plain flour
  • 650ml milk, heated
  • 75g Parmesan, grated
  • 75g Gruyere, grated
  • 1 tablespoon Dijon mustard
  • 1/4 teaspoon paprika
  • salt and pepper


Step 1
Cook pasta according to packet directions, drain and set aside.
Step 2
Heat the oven to 220C. Heat the milk gently in a saucepan or in a pitcher or bowl in the microwave and keep at hand near the stove top.
Step 3
Melt the butter in a saucepan and add then sift over the flour, stirring constantly until thick and well blended.
Step 4
Gradually add the heated milk and stir until the sauce is thickened but still runny.
Step 5
Add the grated cheeses, mustard, paprika and season.
Step 6
Stir through the pasta and transfer to a lightly oiled baking dish.
Step 7
Grate over more Parmesan because you don't have enough cheese yet - ha!
Step 8
Bake for 20 minutes or until browned on top.
Step 9
BE SURE to serve with a generous side of leafy greens!
