My Best Ever Chocolate Cake Recipe

Ingredients

  • 125g Butter, cubed and softened
  • 1/2 cup Raw caster sugar
  • 2 Eggs (free range ploise!)
  • 1 teaspoon Vanilla extract
  • 1/4 cup Berry jam
  • 1 teaspoon Bicarbonate of soda
  • 1/2 cup Wholemeal self raising flour
  • 1/2 cup Wholemeal spelt flour
  • 1/2 - 3/4 cup Milk (Can use non-dairy is fine.)
  • 25g Butter, cubed and softened
  • 3 tablespoons Pouring cream
  • 50g Dark chocolate
  • 1/4 cup Icing sugar

Directions

Baker, baker, make me a CAKE!
Step 1
Preheat oven to 180C.
Step 2
Grease and line a standard 20cm cake tin.
Step 3
Cream butter until pale and whipped-looking.
Step 4
Add sugar in a steady stream and beat in well, scraping down sides of bowl if you need to.
Step 5
Add eggs one at a time, beating well with each addition.
Step 6
Add vanilla and jam, mix through.
Step 7
Sift flour, cocoa and bicarbonate of soda over and beat through.
Step 8
Add milk gradually, gently mixing in, again scraping down sides of bowl if you need to. A half cup should do it, but if it seems too dry, use 3/4.
Step 9
Transfer to cake tin and bake for 35 - 40 minutes.
ICING on top!
Step 10
In a small saucepan gently heat butter, chocolate, cream and icing sugar stirring consistently to avoid burning and also to smooth out any lumps.
Step 11
Pour over cooled cake and hang ten minutes if you can before slicing into it!
