Zucchini and Garlic Pasta

Zucchini and Garlic Pasta


  • 2 Medium Zucchini (finely sliced, or julienned)
  • 1 clove Garlic (minced)
  • 150g Pasta (per person)
  • Olive oil
  • Parmesan cheese
  • Salt and Pepper


Step 1
Bring a pot of salted water to the boil.
Step 2
Add pasta and cook according to packet directions, I like to use angel hair or other thinner pasta for this one, so it's less than 10 minutes.
Step 3
Gently heat olive oil in a large frying pan and add garlic and zucchini and stir to coat well with oil. Season and turn heat to low.
Step 4
Stir the zucchini mixture occasionally to prevent burning.
Step 5
When pasta is ready, strain but don't rinse. If you rinse it'll lose its stick-ability.
Step 6
Transfer the pasta into the frying pan and add more olive oil then stir and mix through with some tongs. Season again.
Step 7
Serve into two bowls and grate over Parmesan cheese.


  • Add frozen peas to the zucchini for extra greens.
  • Add fresh sliced cherry tomatoes as I have done in the photo.
  • Use feta instead of Parmesan.
  • Add chilli for a bit of a bang.
  • Add cubed chorizo or bacon for a bit of meat.
  • Add pine nuts for a bit of chew and protein.
  • Keep it simple stupid!
