{Not} Cherry Ripe Bars

Not a cherry ripe but very excellent all the same.

Not a cherry ripe but very excellent all the same.

  • 1 x 200g bag dried organic cranberries  ~ yes they cost about $12 a bag but they’re going to make many the delicious chocolate bar and you don’t need sulphur, vegetable oil and sugar on your cranberries ‘aight!
  • 100g natural dried sultanas.
  • 100g desiccated coconut.
  • 200g block of good quality chocolate (I used Lindt 70%) you might like to mix it up with a 100g block of milk and a 100g block of dark.

  1. Pulse the cranberries, sultanas and coconut in a blender or processor until well combined.
  2. Scrape out onto a sheet of baking paper and roughly flatten into a log, then place another piece of baking paper atop and use a rolling pin to tidy up into a neat rectangle then pop into the fridge to set somewhat.
  3. Once hardened, slice into fingers ~ I got 16.
  4. Melt chocolate over a double boiler and dollop half of it over the fingers, spreading evenly to coat with the back of a spoon or a spatula.
  5. Run a knife between each finger to separate then pop back into the fridge so that the chocolate sets.
  6. Then remove, turn upside down and repeat with remaining chocolate ~ which you’ll need to reheat.
  7. Again, run a knife between the fingers to separate and slide back into the fridge for the final chill-down.
Roll into a rectangle.

Press and roll into a rectangle.

After hardening in the fridge, slice them into fingers.

♥These shit all over actual Cherry Ripe bars insofar as nutrition is concerned so offer them to the kids notaworry!

These are a good source of fibre, they will help you poo.

If you can’t be arsed making bars then roll the mixture into little balls and dip into chocolate and let set in the fridge.

  1. Where do you get your cranberries from? This sounds amazing! But I’m guessing ocean spray sugar-full cranberries aint gunna cut it..

    • Hi Emily, if you can’t get a hold of organic dried cranberries, just go ahead and use Ocean Spray, still better than an actual Cherry Ripe bar i my opinion! But you can check at health food stores or natural food markets etc. x

  2. Hi Katie,

Just wanted to say that I have been following your blog for ages now, and I really love it. I love the mix of nutrition, mum talk (I’ve got a 17 month old and am 6 months pregnant), recipes and just general chit chat.

I am so making these this weekend. I’m trying not to put on 20kgs like I did with my first pregnancy (of which I kept 5), but man oh man, these look good and at least they have some redeeming qualities :)

My organic store stocks dried sour cherries, so I might even try them with that.

    Thanks again!
