Pineapple and Coconut Popsicles

Shhh, there’s tofu in there too!

Summer is nigh upon us, the freezer needs to be cleared out of bolognese and curry to make way for ICE CREAM and other frozen yummy stuff on sticks, oh yes!

I have brought three different types of popsicle molds into my kitchen since SP decided she quite likes ice cream on a stick and I decided that the organic, hand made, boutique ice creams I was buying at $4 each (although delicious and unadulterated and as such, approved by me)… were just not budget sustainable!

I made these because I quite like the combination of fruity/icy with creamy and because I had a pineapple taking up too much space in my fruit bowl.

I plan to get well popsicle experimental as the summer rolls on so don’t be surprsied if I popsicle-bomb you šŸ˜‰

Pineapple, Coconut and Silken Tofu Popsicles

Serves 6

Ingredients

  • 150g silken tofu
  • 3/4 cups coconut cream
  • 1 teaspoon natural coconut essence
  • 1/4 cup honey
  • 1/2 small pineapple
  • 1 tablespoon chia gel
  • 3 tablespoons apple juice concentrate (or maple syrup or other sweetener)

Directions

Step 1
Combine silken tofu, coconut cream, coconut essence and honey in a saucepan and heat gently, stirring well. Set aside to cool somewhat.
Step 2
Add pineapple, chia gel and apple juice concentrate to a blender and pulse into a smooth consistency.
Step 3
Pour evenly amongst six standard size (Paddle pop sized) popsicle molds.
Step 4
Rinse blender.
Step 5
Add coconut mixture to the blender and blend until smooth.
Step 6
Pour evenly atop pineapple mixture.
Step 7
Insert sticks and into the freezer!

Note

You may use tinned pineapple if you fancy, but please choose the non-sweetened variety!

Feel free to pour coconut first, pineapple last.

If you don't or can't eat tofu then perhaps use all coconut cream and thicken with some chia gel.

Why did I use tofu? For texture and a hit of protein.

Can you taste the tofu? Not a jot!

Why did I use chia gel? For binding the pineapple up a bit, keeping it from being too icy and also because it’s good for you, although a tablespoon of gel amongst six popsicles isn’t really going to confer a great amount of omega-3s but they are in there.

Will the kids like them? Don’t tell them what’s in it and they will.

  1. That is one sneaky use of tofu – love it! Tell me, can you DIY chia gel just by soaking some chia seeds? I am still learning about these little blighters…
