Two Minute Noodles (plus five extra minutes!)

I’ve posted this recipe over at Kidspot already but it’s a ripper of a cheat-sheet meal and it’s been on my mind to whip up next time I’m racing against the clock at dinner time.

Oh hang on, that’ll be tomorrow, and the next day and the next day after that….!

To serve one grown up or two non grown ups:

  • Bring some water to the boil and add 2 x pasta nests.
  • Meanwhile peel and dice a carrot and finely chop a few sprigs of parsley.
  • When pasta is ready, drain and set aside.
  • Put fresh water into pot along with half a vegetarian stock cube, the carrots and parsley.
  • Gently simmer a little.
  • Add pasta back to the stock, just quickly.
  • Pour into a large bowl and get stuck in!
Eat with a tea towel underneath for all the slurping action that will go on!

Use also frozen peas or corn, add some shredded poached chicken or fried tofu cubes… whatever, it’s noodles. Oh and if you don’t have pasta nests just use angel hair pasta.

  1. Yum! I used to do this with the mee gorang type noodles when I was a kid, I thought I was chef extrodinaire but I think it’s definitely something I need to do again soon.
